As promised, a recipe from our event. One of the key things to remember when making any simple recipe is to use great ingredients. The fewer the ingredients the greater the quality needs to be...no chance to mask something inferior! To stack any culinary risk in your favor start your shopping at the farmers market. Locally produced foods are picked when they are ripe and ready to consume.
Sweet potato and butternut squash BBQ side
1 very large sweet potato or yam
1 small to medium butternut squash
2 Tablespoons butter
1 cinnamon stick, ground
1/4 cup maple syrup
1 Cup Platte Cove Natural cranberry maple granola
1/2 cup pecan pieces
Pierce and bake sweet potato in the jacket, 350 degree oven for about 1 hour until tender. Set aside to cool. Cut squash in half lengthwise, scoop out seeds. Spray or lightly oil squash with olive oil and place cut side down on baking sheet. Bake for approximately 1 hour. Can be baked with the sweet potato. *The veggies can also be microwaved to speed up the recipe prep time.
Scoop flesh from both vegetables and roughly combine in an oven proof casserole with the maple syrup and salt and pepper to taste. Dot with butter, sprinkle with cinnamon and top with the granola and pecans.
Bake casserole in a pre heated 350 oven until bubbly and browned, about 30-40 minutes. Serves approximately 4-6
